small handful of pitted fresh cherries (or frozen if not in season)
50ml bourbon or whisky (we used Jameson)
½ tsp vanilla extract
1 tsp caster sugar (or to taste)
squeeze of lemon juice
soda water, to top
Muddle pitted cherries in the bottom of a cocktail shaker to release their juices. Add the rest of the ingredients and muddle again. Add ice and shake well. Pour all into an ice-filled glass and top with soda water.
