Buttered Rum Fizz

Ingredients

  • 45ml rum
  • 5ml melted unsalted butter
  • 10ml pineapple juice
  • 20ml fresh lemon juice
  • 1 dash bitters
  • 100ml ginger ale
  • candied ginger, to garnish (optional)
  • ice
  1. Add all ingredients except the ginger ale to a cocktail shaker, fill with ice and shake hard. Fill a highball glass with ice and top it two-thirds full with ginger ale, then fine-strain the cocktail mixture over and garnish with candied ginger if using.
