Apricots and Figs in Brandy

Ingredients

  • cup brown sugar
  • cup water
  • cup brandy
  • 1 tablespoon honey
  • 250 grams dried figs and dried apricots

These wonderfully infused dried fruits are gorgeous served over New York-style cheesecake, vanilla panna cotta, with ice cream or alongside chocolate cake with whipped cream

  1. Stir sugar, water, brandy and honey together in a saucepan. Add figs and sultanas, and bring to the boil
  2. Reduce heat to a simmer, and then allow to cool in the syrup. Leave overnight, then serve as desired
